Chocolate Peanut Butter Bar Cookie Recipe
1 cup creamy peanut butter
6 tablespoons (3/4 stick) butter, softened
1-1/4 cups sugar
1 teaspoon vanilla extract
1 cup all purpose flour
1/4 teaspoon salt
2 cups milk chocolate chips
Preheat the oven to 350 degrees.
In a large mixer bowl, beat peanut butter and butter until smooth, about 1 minute. Add sugar, eggs and vanilla, and beat until creamy. Blend in the flour and salt. Stir in 1 cup of the chocolate chips.
Spread dough into an ungreased 13x9 inch baking pan.
Bake 25-30 minutes, or until edges begin to brown. Remove from oven.
Immediately sprinkle the remaining chocolate chips onto the cookie layer.
Let stand for 5 minutes (until chips become soft.)
Spread melted chips evenly over the top.
Cool completely, cut and serve.
Yield: 48 bars.
