Ginger Chocolate Chip Cookie Recipe


4-1/2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons salt
1 cup butter, softened
1 cup butter-flavored shortening
1-1/2 cups white sugar
1-1/2 cups packed light brown sugar
4 eggs
1 tablespoon vanilla extract
2 tablespoons skim milk
4 cups semisweet chocolate chips
3/4 cup finely chopped crystallized ginger
Directions:Preheat oven to 375 degrees.
Sift together the flour, baking soda and salt into a small bowl;
set aside.
In a large bowl, cream together the butter, shortening,
white sugar and brown sugar until smooth.
Beat in the eggs one at a time, then stir in the vanilla and milk. Gradually stir in the sifted ingredients. Mix in the chocolate chips and crystallized ginger.Drop spoonfuls of cookie dough about 2 inches apart
onto a cookie sheet.
Bake for 12 to 15 minutes. The cookies should be golden
brown on the sides and the top should have lost it's shine.
Allow to cool on the baking sheet for a few minutes before
removing to a wire rack to cool completely.
Yield:  About 70 cookies.
