Peanut Butter Filled Cookie Recipe 


1-1/2 cup flour
1/2 cup sugar
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup shortening
1/2 cup creamy peanut butter
1/4 cup light corn syrup
1 tbsp. milk
1/2 cup peanut butter for cookie filling


Combine flour, sugar, soda and salt.

Cut in shortening and 1/2 cup peanut butter until mixture resembles coarse meal.

Blend in syrup and milk.

Shape in roll 2 inches in diameter; chill in refrigerator about 2 hours.

Preheat oven to 350.

Slice 1/8 to 1/4 inch thick. Place half the slices on ungreased cookie sheet.

Spread each with 1 teaspoon of peanut butter. Cover with remaining slices. Seal edges with fork.

Bake at 350 degrees for 12 minutes or until browned.

Yield:  24 cookies.
