Peanut Butter Marshmallow Coconut Cookie Recipe


1  cup butter (softened) 
1/2  cup sugar 
1/2  cup brown sugar 
2  eggs 
1  teaspoon vanilla 
3/4  cup creamy peanut butter 
2 1/3  cups all-purpose flour 
1  teaspoon baking soda 
1/2  cup marshmallow cream 
1  cup coconut flakes (sweeted or unsweeted) 


Preheat Oven to 350 degrees.

In a large bowl, cream together butter, peanut butter, white sugar, and brown sugar until smooth and fluffy.

Beat in the eggs one at time. Stir in vanilla.
Combine flour, and baking soda in separate bowl.  Stir into the peanut butter mixture.

Fold in the marshmallow cream.

Sprinkle half of coconut flakes onto ungreased cookie sheet.

Drop dough by spoonfuls onto flaked cookie sheet. Sprinkle cookies with remaining coconut flakes.

Press cookies fork.

Bake at 350 for 15 minutes.

Yield: About 36 cookies.
