Peanut Butter Sandwich Cookie Recipe
3 cups flour
1-½ tsp. baking soda
½ tsp. salt
1 cup shortening
1 cup sugar
1 cup light brown sugar, packed
1 cup peanut butter
1 tsp. vanilla
1-¼ cup peanut butter
1 cup powdered sugar
1 cup rice crisp cereal
Preheat oven to 400 degrees.
In bowl, blend flour, baking soda and salt.
In larger bowl, beat shortening and sugars. Blend in eggs. Add peanut butter and vanilla. Mix well.
Add flour mixture into creamed mixture. Mix well.
Roll cookie dough into 1-inch balls. Place 2 inches apart onto ungreased baking sheets.
On half of cookies, use palm of hand to flatten slightly. On other half, use fork to make an imprint.
Bake for 10 minutes or until golden brown. Cool completely.
Mix peanut butter and powdered sugar until well blended. Stir in rice crisp cereal.
Spread filling on bottom of each cookie. Top with imprinted cookie.
Yield: About 36 cookies.
